I personally always have great intentions to make change but putting those changes into motion is a whole other ballgame. I am a creature of habit and feel quite cozy in my routine. I know that any slight change will cause some type of physical or psychological discomfort, so I avoid it. However then I feel trapped and uncomfortable in a cycle of stagnation.

Change can be voluntary or sometimes out of your control, but it is a part of life. Long gone are the days of our 2 years old temper tantrum complete with a 4 point bang your head and arms and legs flailing on the floor when our parents told us there was an unexpected change.

Over the years, I have learned how to be a creature of change and trust me this was no easy feat. I have learned that change is necessary for survival and in order to change I have to change how I think about the change itself.

A positive attitude causes a chain reaction of positive thoughts, happy events and positive outcomes.

A negative attitude causes a chain reaction of negative thoughts, unplanned events and poor outcomes.

So the bottom line is that it our choice to be happy or sad, but the change is still going to happen.

Change is required after a holiday season. We have eaten a few more cookies than we intended, ate way too many second helpings and too many carbs for our own good. However, I do not believe in dieting as that just causes everyone to feel deprived and then you have failure. Don’t set your self up for failure. Set yourself up for success and a positive change! One little step at a time. One little recipe at a time.

Eating a well-balanced diet, with colorful vegetables, proteins and complex carbohydrates seems easy enough, or is it? Does your family have dietary restrictions like gluten-free or need to follow a diabetic diet? I feel your pain and can help you get sorted and stay on target to meet your goals.

It requires the “P” word– Planning. The planning part starts at home with recipe and meal planning ideas (that is where I can give you a hand) then following through with the plan in the grocery store with a list and then executing the plan in the kitchen.

In order for this plan to work, your dishes need to be packed with the good stuff and be intense in flavor and textures. Today we are going to start with a lovely Chicken Kiev with a roasted pepper tomato sauce, almond green beans and crisp and crunchy endive salad with a lemony vinaigrette.

Chicken Kiev is great all on its own, but my family is really craving some extra warmth and love on these cooler days. I decided to create a Chicken Kiev in 2 different ways to please all the members in my family. I stuffed some of the organic chicken breast with ham and swiss cheese and dusted then with a little parmesan crumbs for my teenagers.

For the carb watching gluten-free, egg free and lactose free crew, I made Chicken Kiev with a delicious stuffing of spinach, mushrooms, onions, garlic and spices and dusted them with a little almond flour before baking. Both versions were served up in a warm cozy bath of roasted red pepper and tomato basil sauce that was to die for.

Chicken Kiev with Roasted Pepper Tomato Sauce

Serves 8 adults or 2 hungry teenagers

Teenager Chicken Kiev Version

  • 4 boneless,skinless, chicken breasts (pounded flat)
  • 4 thin slices of ham
  • 4-8 thin slices of swiss cheese
  • 1 egg beaten and a few teaspoons of water mixed together
  • 1 cup dried breadcrumbs (or panko breadcrumbs)
  • 1/4 cup parmesan cheese
  • dash of dried garlic powder, dried basil, salt and pepper

Diabetic Friendly-Gluten Free-Egg free and Lactose Free Version

  • 4 boneless,skinless, chicken breasts (pounded flat)
  • 1 tablespoon of olive oil
  • 1.5 cups of frozen spinach (thawed and water squeezed out)- you can used fresh as well
  • 8 ounces of mushrooms cleaned and sliced. (brown button mushrooms, shiitake or whatever your little heart fancies)
  • 1 small onion, diced
  • 1-2 garlic cloves, minced
  • splash of white wine
  • salt and pepper to taste (Mrs. Dash)
  • 1/2 lemon juice squeezed
  • 3/4 cup of almond flour
  • dash of dried garlic powder, dried basil, salt and pepper

Teenager Chicken Kiev Version

Step 1: Pre-heat oven to 375 degrees F (190 C)

Step 2: Mix breadcrumbs, grated parmesan cheese, garlic powder, dried basil, salt and pepper together and set aside.

Step 3: Lay flat your pounded flat chicken breasts and lay a piece of ham and cheese in the middle of the chicken breast. Roll chicken breasts ups so that the ham and cheese stay inside the roll.

Step 4: Gently dip the rolled chicken into the beaten egg and then into the breadcrumb mixture and place in a greased oven pan. Drizzle with a little olive oil.

Step 5: Bake Chicken Kiev uncovered for 30-40 minutes or until the juices run clear and the crust is golden brown.

Step 6: Garnish with Roasted pepper tomato sauce- recipe to follow.

Diabetic Friendly-Gluten Free-Egg free and Lactose Free Chicken Kiev Version

Step 1: Pre-heat oven to 375 degrees F (190 C)

Step 2: Mix almond flour, garlic powder, dried basil, salt and pepper together and set aside.

Step 3: Put olive oil, onions, garlic and mushrooms in a pan and saute until slightly caramelized. Add a splash of white wine and spinach, season to taste and then a little squeeze of fresh lemon to finish off the dish. Remove from heat and set aside.

Step 4: Lay flat your pounded flat chicken breasts and place a couple of tablespoons full of the spinach mixture in the center leaving a little room around the edges.

Step 5: Roll your chicken breasts up so that the spinach mixture stays inside.

Step 6: Gently dip your chicken breasts into the almond flour mixture to coat all sides. (almond flour sticks well to most things with just a little natural moisture from the chicken. However, you can dip first into a beaten egg bath if you do not have any egg restrictions.) Place your chicken Kiev in a greased baking dish and drizzle with a little olive oil.

Step 6: Bake Chicken Kiev uncovered for 30-40 minutes or until the juices run clear and the crust is golden brown.

Step 7: Garnish with Roasted pepper tomato sauce- recipe to follow.

Roasted Pepper Tomato Sauce

  • 16 ounce can of chopped tomatoes (I whiz them quickly in the food processor as teenagers are texture sensitive)
  • 8 ounces of roasted red peppers (I whiz them quickly in the food processor as teenagers are texture sensitive)
  • tablespoon olive oil
  • 1/2 onion chopped
  • 2 cloves of garlic, minced
  • splash of red wine or white if you have that open
  • handful of fresh basil, rough chopped
  • pinch of sugar alternative (Stevia, etc)
  • salt and pepper to taste

Step 1: In a medium-sized pan, place your olive oil and add your onions until they start to caramelize.

Step 2: Add your garlic for a minute or so (don’t burn your garlic as your sauce will become bitter)

Step 3: Add your chopped tomatoes and roasted red peppers, splash of wine, sugar alternative, salt and pepper and 1/2 of my chopped fresh basil and cook over a low simmer for about 15 minutes to allow the seasonings to mingle, if you have longer to simmer then that is better.

Step 4: Remove the sauce from the burner, add the remaining chopped fresh basil and stir into sauce.

Step 5: Place 2-3 tablespoons of roasted red tomato sauce on a plate. Top with a chicken Kiev. Place a little dab of sauce of top of chicken Kiev and garnish with fresh basil. Enjoy as change is good! (this sauce is also fantastic on top of pasta, italian fish, grilled tofu, and whatever your little heart desires.

    What a lovely post Bam and you are so right, change is inevitable and it is how we deal with it that counts – I am trying to always look at the positive – not always easy but certainly more pleasant than being negative.

    I’ve got to tell you I’d have a hard time deciding which one to make so I guess the best idea is to just do both. That roasted pepper tomato sauce looks scrumptious.
    You scared me there – I was afraid you were announcing the close of your kitchen & you had me in a panic for a minute. I’m seeing a few move over to the self hosted web sites so I’d be really interested in know how that all goes. I know Danny is now doing that & the site looks beautiful. Are you looking for more flexibility than WP? And one thing I wonder about is, if it’s self hosted, how do people find you? I mean, heck I’ll know how to find you, but what about new readers – do you need to get googled? I can be hopeless with these things which is funny since I came out of a large software company – but that was back in the “olden days” when people had terminals on their desks & not pc’s.

    Congratulations on making the move! I tried it last year, and it didn’t go well, so I switched back. I hope you have better luck than me, I will definitely be interested to know how it goes!!

    As far as dietary restrictions, my husband can’t eat gluten, diary, eggs, soy, almonds and peanuts, mushrooms, and other things…it has been very challenging lately, in fact, I have been quite depressed about it. Hopefully this is only temporary. I have been hiding this fact on my blog, but I am sure it will come out eventually. I still cook with that stuff for my girls though, I don’t want to deprive them. Ugh!!

      You are not alone in dietary restrictions out there. There are so many families that struggle with the same thing and are looking for suggestions to make their lives easier. There is no need to be sad but think of it as a challenge you can overcome.         I could see how that would cause me a great deal of grief as well. I am also finding when things move over they need a whole lot of clean up and things need to get fixed up and re-attatched and all kinds of clean up required.     Hello BAM, oh ye, we all are a creatures of habits, more or less, and getting out of our comfort zone is so-so uncomfortable! Even when it’s good for you… Anyway, glad we had this “talk” :) Your chicken Kiev is fantastic, didn’t your teenagers eat the spinach one too? I always try to negotiate something healthy into my teenager (sometimes I have to bribe, but whatever works to get into his growing body a few more nutrients!). Good luck with moving of your blog!       Hello Marina, I hear you loud and clear about getting your kids to eat healthy dishes. I have to sneak it in but yes my kids do eat lots of veggies but spinach is not one of the ones they like so much. However, I can get them to eat many Asian vegetables and fruits so hopefully one dish at a time I can get them to expand their culinary tastes. It may take me a couple of weeks to get moved over as much to do and update but e-mails in theory should get transferred over and looking forward to keeping in touch. Take care, BAM

    I moved to a self hosted word press blog in end of November and I think i took the right decision. Good luck with your move.
    Chicken kiev looks delicious, I made them once but instead of baking I fried. silly me! Will do that again.

    Change is incredibly difficult, no matter how big or small. Kudos to you for embracing it and facing it without fear!       Thank you Hannah. The dietary requirements and change have been around for some time however I have not posted these kinds of recipes as it did not fit with my teenager theme.     Your updated chicken kiev sounds delicious. I make a stuff breast with spinach but it is with a white wine sauce. I can’t wait to try your version with the red pepper tomato sauce. I know you will do terrific with your switch…I’m looking forward to the new look.

    We are on the same wavelength. I’m facing a big change with work (that is now quite “real” in 2013) and trying to stay positive about it! I also often make two versions of my dishes — one for the ponytails and one for my husband and I. This is the perfect dish for me right now because it provides a healthy option for the adults. I’ve managed to take off most of my weight-gain for the holidays…just a little bit left to go. Here’s to a healthy and happy start to 2013!

      Good luck with changes at your job/profession. I know that changes are always uncomfortable. More responsibilities, new things can be stressful. However, Imagine how boring things would be in our lives if everything was the same old , same every day. Sometimes change is good.         You raise some good points BAM. i have to tell you that I made your Chicken Kiev (teenager version) last night for company, with the red pepper sauce, and everyone really enjoyed it. (I used light swiss for good measure.) I can’t believe that I’ve never made it before, but now I feel so good about it. The panko crust worked really well too. I’ll be making this again for sure– and I hope to share it on my blog if that is okay with you?

    Wise words about change…it is good to embrace it and often to seek it as well, for sure it is a part of life. I love this recipe and want to try both versions! I have just realized that where i used to always subscribe via email and follow people so I was covered by both, now some people are only showing up in my reader and not via email, so I will definitely resubscribe via email…I’m better about checking that anyway!

        I actually just figured out that the reason so many people’s posts had dropped off of my email was the new (to me) feature in WP reader where you have to manually go back in and request email notification on folks you follow….even some of those you had already subscribed to. I’ve missed a lot!
